JR West built 16-car 700-3000 series unit, displacing 100 series used on Hikari services. 700-3000 series differ from 700-0 series owned by JR Central, in having same traction motors and same bogies as 700-7000 series. LED destination indicator panels are fitted on the side of the body instead of destination indicator screens adopted by 700-0 series. Although livery is same as 700-0, "JR700" logos are applied on the cab side. Interior layout and accommodation is quite same as 700-0 series. Seat designs are different from 700-0 series.
700-3000 series displaced with remaining 100 series used on Hikari services. When increased NOZOMI services started in 2003, 700-3000 series began to be used on most of NOZOMI services.
The last remaining Nozomi services using 700 series were switched to N700 series from 2012, excepting seasonal Nozomi services.
Now 700-3000 series are primarily used on Hikari services between Shin-Osaka and Hakata, and Kodama services between Tokyo and Shin-Osaka.
